Using European pilsner malt and malted wheat as a base, American Kolsch is bittered with Magnum hops and features herbal, citrusy and spicy notes from end of boil additions of Tradition, Saaz and Saphir. Pouring golden in color, the aroma is of bready malt punctuated by a slightly minty hop character. With a light to medium mouthfeel, American Kolsch delivers a honey-like malt sweetness that gives way to a crisp clean finish with a touch of lingering citrus/herbal hop flavor.

Rare Vos Amber Ale is styled after the smooth, drinkable beers popular in Belgian cafés. It pours a light copper hue, contrasting beautifully with a big, creamy white head. The nose offers orange blossoms and slight spice. On the palate, the caramel maltiness shines strongly but with little sweetness. The profile leans toward dry fruity (yeast-affiliated), slightly fruity/hoppy with a beguiling spiciness. This complex, medium-bodied beer has a smooth mid-palate and moderate dry finish. Well-balanced in all elements, it’s a mild, mellow brew.

This beer couldn’t have been done without the help from our friends at High West Distillery in Park City, UT and Chicago’s-own Metropolitan Coffee. We brewed a rich, malty Imperial Stout with some of Metropolitan’s Spice Island blend, then let it vintag-ize in High West Rye and Bourbon Barrels for up to 17 FREAKING MONTHS. It’s good to have friends!

Fermented with dates and figs, this smooth barleywine has a unique flavor.The concept for this beer came from an old cellerman’s manual Sam came across. At about 15% ABV, this beer is a great candidate for aging. Over time, the beer dries out and the pit fruit flavors come forward and the hops recede. Our recommendation? An unfiltered, unfettered, unprecedented brown ale aged in handmade wooden brewing vessels. The caramel and vanilla complexity unique to this beer comes from the exotic Paraguayan Palo Santo wood from which these tanks were crafted. Our seasonal Double IPA threatens all notions of what is “hoppy” with a clean malt base and imposing quantities of American hops. Maddening hop aromas of grapefruit, guava, and dank pine saturate the palate as a touch of balancing malt and spicy Rye keeps the sharp clean bitterness in line
